Many companies, including Quaker Oats (makers of Progresso soup) already announced 20 percent price hikes for January. Dollar Tree announced most stores will hike average prices to $1.25. Expect soaring Bidenflation to accompany Bidenaudits. Even those with low-to-moderate incomes must keep receipts as millions of tax audits are expected to yield enough to pay for spending. Expect worse as mainstream press tell Ds losses were from slow action, not anger at unrestrained Ds destroying the country.

Since we can't do much individually to slow the destruction, we prep for survival.

Cooking Long-Term Storables

Last week we described long-term-storable legumes and grains that provide essential nutrition. We did not pick specific legumes. To select legumes for storage, consider prices, availability, and recipes using them we might find tolerable so we can select those we want to eat, together with quantifying “extras” for those recipes.

Most Americans rely on convenience foods, never cooking dry legumes, a skill our ancestors knew well. Dry legume samples are available at Kroger (City Market), Dollar General, and Walmart, with others at Amazon-try varied recipes.

Beans

Most beans, from Adzuki through Black, Garbanzo, Great Northern, Pinto, Red Kidney and White Navy, begin cooking the same way for most recipes; I prefer adding extras and flavorings later. Use few red kidney beans as they are gassier than others. The long-soak method requires soaking a pound of beans (2 cups) (beans may be mixed) in 8 cups water for 4 hours, drain and replace the water and continue soaking overnight, then replace the water early in the morning and again just before cooking. The water changes help with intestinal gas. Use no soda. The quick soak method is gassier, it requires bringing beans to a boil for 5 minutes in the 8 cups of water, allowing them to cool for an hour, then changing the water and cooking the beans.

To cook, bring beans to a boil and simmer 1-1/2 hours. Instead of boiling, one may pressure cook at 10 psi for 30 minutes and cool naturally (taking an hour); or use a crock pot for 5-6 hours. Dry beans may also be soaked, boiled and home-canned to reduce the hassle of soaking and boiling. Add water as needed. Water may be changed after cooking to reduce intestinal gas. Salt as needed to taste. Use these boiled beans in place of canned beans in recipes from vegetarian cookbooks of your choice. The remaining recipes are experimental adaptions of recipes to storable ingredients, add water to them as needed.

A South American classic adding onion flakes, garlic powder, rice and dent corn to boiled beans; then boiling until the rice and corn are cooked.

For basic beans, add 1/3 cup (before rehydration) onion flakes, and ¾ tsp oregano and simmer another half hour.

For bbq-flavored beans add ½ cup dry onion flakes, 1 tbsp garlic powder, ¼ cup sugar, 1 12-oz. bottle bbq sauce, and sufficient water, and simmer at another hour.

For brown beans, add 1/3 cup vinegar, 1-1/2 tablespoons brown sugar, and 3 tablespoons molasses, simmer another half hour.

For chili, add 4 tsp cumin, 2 tsp oregano, 2 tsp garlic powder, 3 tbsp chili powder, 2/3 cup onion flakes, 2 cups tomato sauce from reconstituted tomato powder, and a crumbled dry chipotle pepper, and other spices to taste.

Pulses

Split yellow and green peas, lentils and other pulses (Dal in India), need no soaking.

For basic lentils, to 1-1/2 cups lentils add 1/3 cup onion flakes, 1 tsp garlic powder, ¼ cup dry diced carrots, a bay leaf and 6 cups water, then simmer 30 minutes.

For Dal, I've experimented with curry powder along with onion flakes, garlic powder and dried jalapeno (chipotle) pepper added to basic lentils or boiled split peas.

Pea and lentil soup recipes are in most cookbooks, but substitute onion flakes and dry carrot dices for fresh ingredients and ham TV for ham; these call for more water and an hour's boiling.

WuFlu

Thanksgiving week variant “O” or Omicron, was identified spreading through Botswana and South Africa. The next name in sequence was “Xi” but WHO is kissing up to China. With 50 mutations, and 32 mutations in spike protein (10 in the domain targeted by vaccines), all three vaccines are likely useless against O. O is spreading fast in South Africa, where it is replacing Delta. Vaccine makers claim to be working on new vaccines.

New Zealand, Israel and other countries (including USA) suddenly tightened border restrictions, particularly for travelers from southern Africa-this will make little difference as illegals are still being flown nationwide. Only legal travelers need vaccine or tests at the border.

O is blamed for Friday's sudden stock market collapse.

O is another reason why Fauci and Daszak deserve the death penalty for supporting “gain of function research” in Wuhan.
